NOTHING BISCUITS
Ingenting
This treat is called Ingenting – which means ‘nothing’. Because when people say ‘I can eat nothing more’, you can always fit in one of these very light treats!
BISCUIT BASES:
300 g/2¼ cups plain/all-purpose flour
2 egg yolks
175 g/1½ sticks butter
2 tablespoons double/heavy cream
25 g/1 oz. icing/confectioners’ sugar
½ teaspoon grated lemon zest
MERINGUE TOPPING:
2 egg whites
a tiny pinch of salt
275 g/1½ cups minus 2 tablespoons caster/superfine sugar
1 teaspoon vanilla sugar OR extract OR the seeds from 1 vanilla pod/bean
1 teaspoon white wine vinegar
3 tablespoons finely chopped almonds
a baking sheet, greased and lined with baking parchment
a 5-cm/1-in. fluted pastry/cookie cutter
a piping/pastry bag fitted with a star nozzle/tip
MAKES 30–35
Blitz the ingredients for the biscuit bases briefly in a food processor. Once a smooth dough has formed, wrap in clingfilm/plastic wrap and chill in the refrigerator for at least 30 minutes.
Preheat the oven to 160°C (300°F) Gas 2.
Roll out the dough on a lightly floured surface to a thickness of 3 mm/⅛ in. Using the round fluted pastry/cookie cutter, stamp out circles and place on the prepared baking sheet. Repeat until all the dough has been used.
For the meringue topping, beat the egg whites with a tiny pinch of salt until stiff using a hand-held electric whisk or in a stand mixer with the whisk attachment. Slowly add the sugar and vanilla, bit by bit, and whisk on high speed until you have a shiny mixture that forms stiff peaks (still soft enough to be spoon-able). Fold in the vinegar and chopped almonds.
Pipe or spoon the meringue mixture onto each biscuit base, spreading or placing it almost to the edge (the meringue will not spread much during baking).
Bake the biscuits in the middle of the preheated oven for around 18–20 minutes or until the base is cooked and the top is lightly browned. Remove from the oven and allow to cool before eating.
